Okay so there are definitely some great recipes floating around that show you how to make an exact replica of the delicious plant-based meal at Docking Bay 7, the Felucian Garden Spread. My brother-in-law made it once and it was SUPURB!

However, it takes awhile to make and the ingredients can get kinda pricy.

So today I want to bring you a quick and easy, and fairly cheap, alternate way to make this delicious dish at home! While it does not taste EXACT, it’s pretty darn good if you ask me.

Ingredients:
Plant-based meatballs (I used Gardein)
Hummus of your choice
Pita bread
Garlic Powder
Buttery spread of your choice
Cucumber
Tomato
Oil of your choice
Red wine vinegar
Salt
Pepper

The process:
Cook the meatballs
Make the pita
Make the cucumber tomato salsa
Assemble the dish

Easy-peasy lemon squeezy! Here’s my process broken down for you with lots of pictures to guide you on your way 😄

First, decide how you’ll be cooking your meatballs. I followed the directions on the back of the package for baking them in the oven. I then preheated my oven to 450 and arranged my meatballs on a tray.

Next, I put them in the oven to bake. The instructions say to bake for 15+ minutes.

While those are baking, cut up the pita bread into triangles.

Then spread butter of your choice (I used Country Crock) and sprinkle garlic powder on top. I used about 1 tbsp total of the butter and 1 tsp total of the garlic salt.

After that, you’ll want to get started on the cucumber tomato salsa. First, cut up your veggies.

Then combine them into a bowl.

Add salt, pepper, red wine vinegar, and oil of your choice (I used vegetable oil). The amount you put in depends on the taste you prefer. I ended up using about 1 tsp oil, 1 tbsp vinegar, 1/8 tsp salt, and 1/4 tsp pepper.

As the meatballs are finishing up (at about 2-5 minutes remaining), put the pita bread into the oven to melt the butter and crisp them up a little.

Once everything is done baking and has been prepped, it’s time to assemble the dish!

I start by spreading 1/4 of the container of hummus on my plate, then top with 3 meatballs, followed by a fan of the pita bread on the back of the plate (I use one whole slice of pita per serving), then top with the cucumber tomato salsa.

This recipe serves 4 people!

If I had to buy EVERY ingredient on my list, here would be my price breakdown:
Gardein Meatballs: $4.49
Simple Truth Garlic Hummus (8 oz container): $2.99
Toufayan Whole Wheat Pita: $1.25
Smidge and Spoon Garlic Powder: $1
Country Crock (45 oz container): $4.29
Cucumber: $0.59
Tomato: $1.20

Total: $21.38 (excluding tax!)
Total per serving: About $2.50-$3.00
(it’s hard to divide up the spices, oil/butter, and vinegar because there’s tonsss of servings per container.)

Since I already had most of the ingredients, it only cost me $10.52 to get the produce, meatballs, hummus, and pita!

Ingredients:
1 package Gardein Meatballs
1 8 oz container of hummus
4 slices of whole wheat pita bread
1 cucumber
1 tomato
~1/4 tsp garlic powder
~1 tbsp Country Crock
~1 tsp vegetable oil
~1 tbsp red wine vinegar
~1/8 tsp salt
~1/4 tsp pepper

Process:
1. Begin by deciding how you’d like to cook your meatballs. I chose the oven method. If you also want to do the oven method, preheat your oven to 450. Place your meatballs in the oven. Bake for 15 minutes or until cooked all the way through.
2. Slice your pita bread into fourths. Spread Country Crock on each slice then sprinkle garlic powder on top.
3. Make the cucumber tomato salsa: dice your cucumber and tomato. Put both in a bowl. Add oil, vinegar, salt, and pepper. Stir to combine.
4. Place pita in the oven when your meatballs have about 2-5 minutes remaining.
5. Remove both meatballs and pita from oven.
6. Assemble the dish- spread 1/4 of the hummus container on each plate. Top with 3 meatballs. Place 4 pita slices at the top of the plate. Top with 1/4 of the cucumber tomato salsa.
7. ENJOY!
